Milk is considered invaluable for our health and it’s recommended we have at least a glassful every day. This recipe of carrot has vata calming properties and also balances dosha. It nourishes the dhatus and boosts immunity, so drink up!

Substitute carrot milk for your mid-day beverages.
For as long as we remember, we’ve always been told to drink milk. According to Ayurveda, milk nourishes the dhatus, promotes balanced emotions, and balances the doshas. It also promotes ojas, which in turn strengthens immunity. Milk should always be had warm, and if you don’t like the taste of plain milk, you can add carrots to it. Carrots calm vata and kapha. They also boost immunity and cleanse the liver and blood.
Milk - 1¼ cup
Green cardamom (elaichi) – 1 pod
Carrots – 2 medium
Take the carrots, cut the ends, peel and grate it finely.
Pour milk in a pan and add the cardamom seeds. Stir on medium-high heat.
When the milk gets hot, add the grated carrots. Keep stirring to allow the carrots to soften without the milk boiling over.
Add honey to taste. Add less since carrot is already sweet.
Turn off heat and keep stirring to avoid a skin forming on the milk.
Pour in a bowl and enjoy this thick beverage.
You can also add amaranth to this beverage. Cook it in water separately and add to the carrot milk. But, you should increase the quantity of milk, as it will soak up a little of the milk.
This thick, healthy drink can be taken for breakfast during the months when the weather transitions from winter to spring. It can also be eaten for dinner with the addition of amaranth.
