Khajoor (dates) are widely known for their Ayurvedic health benefits. It is these benefits that have made them widely used in medicines and various therapies. Dates have Madhura Rasa (sweet), a trait that makes them increase the moistness of the dhatus (bodily tissues) in our body. They are cooling and balance both the vata and pitta. They are highly beneficial in easing arthritis, constipation, cystitis, acidity, anemia and diarrhea.

To reap these benefits in the form of a delicious chutney, here’s how you can make it in no time at all.
1 tbsp oil
¼ tbsp kaale sarso ke beej (black mustard seeds)
1 cup pitted khajoor (dates)
½ orange juice
¼ cup lemon juice
¼ tsp ground dhaniya (coriander)
¼ tsp ground elaichi (cardamom)
¼ tsp ground laung (cloves)
¼ tsp salt
Start by preparing all your raw ingredients. Take the pits out of the dates, juice your orange and lemon, and grind the coriander, cardamom and cloves.
Preheat a saucepan and add the oil to it. Once the oil is adequately hot, add the mustard seeds. Keeping the gas on low, sauté them till they start sizzling and jumping.
Add the rest of the ingredients and allow it to simmer for around 10 minutes. Make sure you keep it covered.
Once it cools, put it in a blender and churn till smooth.
